Ahurei Beef is a set of standards for well-marbled beef. Progeny of Ahurei conforming cows bred to Ahurei conforming bulls should consistently provide well-marbled beef, off grass, in 18-24 months.
Angus cattle must have the genetics to consistently produce well-marbled offspring. These standards ensure consistency and produce meat with a minimum AU marbling score of 3, and, mostly, scores of 5+
Why Marbled Beef?
There are many factors that influence beef eating quality, and each of these factors play a part in the overall beef eating experience. It is agreed that the single biggest attribute to beef eating quality is marbling. Marbling is the small flecks of fat that reside within the muscle (not exterior fat). As a steak cooks, the fat melts, adding flavour to the meat, and relaxing the meat fibers, resulting in increased tenderness and succulence.

Ahurei Beef Standards
Ahurei Beef is a set of standards for growers and breeders to consistently deliver animals with high marbling:- * Ahurei certified heifers/cows must have been scanned by a certified scanner and show a percentage IMF score of at least 7.0. We are also looking to have DNA testing included. * Ahurei bulls can only be bulls with marbling EPDs/EBVs in the top 1% of their breed in NZ/Australian/USA Angus register * Ahurei progeny should have an AU marbling score of at least 3.0 (0-9 scale).
